Chocolate Layer Cake



This cake is baked with love to celebrate J's 25th birthday :) An incredibly rich and not-too-sweet chocolate layer cake. The chocolate sponge cake is simple and easy to make, and the bittersweet chocolate ganache is a delight. This recipe is definitely a keeper! :D

Chocolate Layer Cake

Ingredients:
12 egg yolks
8 egg whites
125 gr sugar

75 gr flour
60 gr cocoa powder
25 gr milk powder
1 tsp baking powder

185 gr butter, melted
1/2 tsp chocolate essence

Syrup:
1 1/2 tbsp warm water
1 1/2 tbsp sugar
1 tbsp rum essence

Chocolate Ganache:
200 ml whipping cream
400 gr dark cooking chocolate
75 gr butter

Method:
1) Beat eggs and sugar until thick and fluffy.
2) Add flour, cocoa powder, milk powder and baking powder, mix until well combined.
3) Add butter, mix until well combined.
4) Add chocolate essence, mix until well combined.
4) Bake at 180 deg C for 40 minutes.
5) After cooled, divide cake into 3 layers evenly.
6) Place one layer, brush with syrup and spread chocolate ganache over cake.
7) Repeat with remaining layers, spread remaining chocolate ganache over top and sides.
8) Syrup: Mix warm water, sugar and rum essence until well combined.
9) Chocolate ganache: Heat whipping cream. Add dark cooking chocolate, mix well. Add butter, mix well. Cool.

Yield:
one 22 cm round baking pan
