Celebrate chinese new year with these crunchy cornflake cookies! May the new year be as sweet and yummy as the cookies, cheers! :D
Ingredients:
200 gr butter
100 gr sugar
1 egg yolk
1/2 tsp vanilla essence
200 gr flour
125 gr cornflake
Method:
1) Beat butter, sugar, egg yolk and vanilla essence until creamy.
2) Add flour, mix at low speed until well combined.
3) Add cornflakes, mix at low speed until well combined.
4) Cover and refrigerate for 5 minutes.
5) Roll into balls and place on a lightly greased baking tray.
6) Bake at 160 deg C for 25 minutes.
Yield:
70 cookies
