Oatmeal White Chocolate Chunk Cookies







If you want cookies that are crispy on the edges, soft and chewy in the center, sweet and indulging, yet make you feel less guilty about eating them, then... these cookies are perfect for you! While you are happily munching them, just think of all nutritional benefits that the oatmeal brings, and forget about the bad bad butter, sugar and chocolate combo :D

These cookies remind me of my favourite white chocolate chunk macadamia cookies from Mrs Field's, perhaps due to their similar texture. Overall, the recipe is a keeper and these cookies will be regulars in my tupperware :)

Oatmeal White Chocolate Chunk Cookies

Ingredients:
113 gr butter
120 gr sugar

1 egg
1 tbsp milk
1 tsp vanilla

140 gr flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

113 gr oatmeal
50 gr white chocolate, chopped

Method:
1) Sift flour, baking soda, baking powder and salt.
2) Cream butter and sugar until fluffy.
3) Add egg, milk and vanilla, mix until well combined.
4) Add flour mixture, mix at low speed for 1 minute.
4) Add oatmeal and white chocolate chunks, mix well.
5) Cover and refrigerate for 10 minutes.
6) Scoop the dough and place them 5 cm apart.
7) Bake at 170 deg C for 12 minutes.

Yield:
40 cookies
