Cheese Langue De Chat Cookies




Langues de chat are classic french cookies. These cookies are also called cat's tongue or "lidah kucing" in Indonesian. Most recipes tend to ask for more egg yolks, leaving you with a giant lot of leftover egg whites. If you are bored with egg white omelette, angel cake, meringue, mousse, etc... this recipe will ensure that you put a good use of the egg whites :)

For a little twist, I make the cheese version of langues de chat. The cookies are very crispy, but once you put them in your mouth, they will melt instantly, leaving you with the buttery, cheesy and sugary feeling. Dipping langues de chat in melted white chocolate will be a more sinful and sexy way to enjoy them :D

Cheese Langue De Chat Cookies

Ingredients:
250 gr butter
140 gr sugar

75 ml eggs

225 gr flour
60 gr corn flour

150 gr grated cheddar cheese

Method:
1) Sift flour and corn flour.
2) Cream butter and sugar until fluffy.
3) Add eggs, mix until well combined.
4) Add flour, mix until well combined.
5) Add cheese, mix until well combined.
6) Place mixture in a piping bag. 
7) Pipe into a lightly greased baking tray.
8) Bake at 150 deg C for 20 minutes.
