Chocolate Chip Muffins



This afternoon, I had serious cravings for bread and chocolate. I was too lazy to bake chocolate bread (imagine the kneading, proofing and waiting time... err no, thank you). Since The American Heritage Dictionary defines muffin as a small, cup-shaped quick bread... a chocolate chip muffin should satisfy my cravings, right? ^^

I did not have enough chocolate chips for the recipe, so I used some chocolate rice too. The recipe is very simple. Basically, you just mix here and there, fold here and there, spoon batter, bake and the muffins are ready to serve! The muffins are soft and moist, even after a few hours. They taste better when served warm with a little spread of butter ^^

Chocolate Chip Muffins

Ingredients:
250 gr flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

1/3 cup chocolate chips 

2 eggs
150 ml milk
60 gr melted butter
150 gr sugar

Method:
1) Sift flour, baking powder, baking soda and salt in a mixing bowl.
2) Add chocolate chips, mix well. Make a well in the centre. Set aside.
3) In another bowl, whisk eggs, milk, butter and sugar.
4) Pour the egg mixture into the flour mixture.  
5) Fold gently until a wet batter is formed. Do not over mix.
6) Spoon batter to fill 2/3 of the muffin cups.
7) Bake at 180 deg C for 15 minutes.
8) Serve warm.

Yield:
8 muffins
