I have always loved rum raisin. Every cake, crepe, ice cream and pudding with rum raisin in it definitely goes to my favourite list :D This rum raisin ice mambo is no exception. Initially, I am worried about combining rum raisin and coconut milk. However, I am so delighted when the ice mambo turns out fine and yummy :D
Rum Raisin Ice Mambo
Ingredients:
100 ml coconut milk
250 ml water
40 gr sugar
1/2 tsp salt
1/2 tsp vanilla
1 tbsp rum essence
1 tbsp corn flour, mix with 3 tbsp water
40 gr raisins, soaked in rum
1) Combine coconut milk, water, sugar, salt and vanilla. Cook until mixture boils.
2) Add rum essence and corn flour, mix well. Remove from heat.
3) Add raisins, mix well.
4) After cooled, pour mixture into ice mambo plastic bags. Seal with a knot.
5) Freeze.
Yield:
5 ice mambo
