Mung Bean Ice Mambo



A traditional Indonesian ice cream made from mung bean and coconut milk. Mung bean can also be replaced with black glutinous rice, red bean, coconut flesh, durian, jackfruit or raspberry flavoured syrup. It definitely makes a perfect treat for a lovely afternoon :D

Mung Bean Ice Mambo

Ingredients:
100 gr mung bean, soaked overnight
400 ml water

200 ml coconut milk
400 ml water
80 gr sugar
1/2 tsp salt
1/2 tsp vanilla
1/2 tsp pandan essence
1/2 tbsp corn flour, mix with 1 tbsp water

Method:
1) Cook mung bean until there is very little water left.
2) Add coconut milk, water, sugar, salt, vanilla and pandan essence. Cook until mixture boils.
3) Add corn flour, mix well. Remove from heat.
4) After cooled, pour mixture into ice mambo plastic bags. Seal with a knot.
5) Freeze. 

Yield:
10 ice mambo
