Chocolate Chip Cookies


Ahoy! Chocolate chip cookies are the goddess of all cookies. They have sooo many varieties. There are the thin and crispy ones, thick and crunchy ones, and also soft and chewy ones. Some use white chocolate chips, others use milk or dark chocolate chips. Almonds, cashew nuts, macadamia nuts, peanuts, pecans or walnuts can be added in too.

J is craving badly for something sweet. So I decide to bake him some chocolate chip cookies. For me, the soft and chewy ones, like Mrs Field's white chocolate chunk macadamia cookies, are perfect! I can eat a dozen of them in a row :D However, since the cookies are for J, they have to be super crunchy, as he likes them that way :)

When the cookies first come out from the oven, they are super soft and chewy ^^ Since the recipe is intended for crunchy cookies, the softness and chewiness are gone in a zap. Welcome crunchy crunchy cookies...

The cookies are delicious when served warm with a glass of cold milk. I try dipping my cookies in the milk before eating them, it is fun and yummy as the cookies literally melt in your mouth :D

Chocolate Chip Cookies

Ingredients:
280 gr flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla

260 gr sugar
150 gr butter, melted
3 eggs

200 gr chocolate chips
50 gr cashew nuts

Method:
1) Sift flour, baking soda, salt and vanilla.
2) Combine sugar, butter and eggs, mix at high speed for 3 minutes. 
3) Add flour mixture, mix at low speed for 1 minute.
4) Add chocolate chips and cashew nuts, mix well.
5) Cover and refrigerate for 30 minutes.
6) Scoop the dough and place them 8 cm apart.
7) Bake at 190 deg C for 15 minutes.

Yield:
60 cookies
