Mochi is a traditional japanese snack, which is very sweet, soft, chewy and cute :D Chocolate, coconut, red bean and strawberry jam can also be used for variations.


1 cup glutinous rice flour
1/4 cup sugar
1 cup water
pandan essence

1/2 cup peanuts, toasted and grounded
1/4 cup sugar
1 tsp sesame seeds, toasted

1) Combine glutinous rice flour, sugar, water and pandan essence, mix well.
2) Pour into microwaveable dish, cover with plastic wrap.
3) Microwave on high for 3 minutes.
4) Remove plastic wrap, set aside to cool.
5) Shape into balls and coat with peanut mixture.
6) Peanut mixture: Combine peanuts, sugar and sesame seeds, mix well.
