Cream Puffs


I love cream puffs! They are heavenly delicious and make an impressive dessert :D Cream puffs are believed to have originated from the 17th century. These days, the old-fashioned delicacy is making a splash all over the continents. There are Beard Papa, Big E and Choux Factory: all of them sell cream puffs as their signature food! Beard Papa even offers green tea, earl grey tea, strawberry and pumpkin custard fillings! *very tempting ar* However, the best one is definitely my mom's homemade cream puffs  :)

Cream Puffs

Ingredients:
125 gr butter
250 ml water
1/2 tsp salt
150 gr flour
4 eggs

Custard Filling:
200 ml milk
70 gr sugar
a pinch of salt
25 gr corn flour
1 egg yolk
2 tbsp rum essence

Method:
1) Heat butter, water and salt. Stir until mixture boils.
2) Add flour, mix until well combined. Remove from heat.
3) Add eggs, mix until well combined.
4) Place batter in a pastry bag.
5) Pipe into a lightly greased baking tray.
6) Bake at 200 deg C for 25 minutes.
7) Custard filling: Heat milk, sugar and salt. Stir until mixture boils. Remove from heat. 
8) Mix corn flour, egg yolk and a little milk. 
9) Pour into milk mixture, cook until mixture thickens. Remove from heat.
10) After cooled, add rum essence, mix until well combined.

Yield:
24 giant puffs
