Sweet Peanuts And Potato Chips



Try these sweet peanuts and potato chips with rice for a light meal, or serve as snack while watching your favourite movie at home :D

Sweet Peanuts And Potato Chips

Ingredients:
500 gr potatoes
150 gr peanuts

1 tbsp oil
5 shallots, pounded
2 cloves garlic, pounded
2 red chillies, pounded
2 cm galangal, crushed
2 salam leaves

75 ml coconut milk
100 gr sugar
1 tsp salt
1 tbsp lemon water

Method:
1) Potatoes: Slice potatoes. Rinse potatoes 3 times until water runs clear. Soak in cold water. Drain water. Deep-fry until golden brown. Drain excess oil. Set aside to cool.
2) Peanuts: Deep-fry until golden brown. Drain excess oil. Set aside to cool.
3) Mix potatoes and peanuts until well combined. Set aside.
4) Stir-fry shallots, garlic, chillies, galangal and salam leaves in oil until fragrant.
5) Add coconut milk, sugar, salt and lemon water. Cook over low heat until mixture thickens. Remove from heat.
6) Add potatoes and peanuts. Mix until well combined.
7) Cool and serve.
